1969 thunderbird renovation-suggestions welcomed

Hello all,new to the community so I thought I would give you a brief background on my history.
My Dad had several thunderbirds through my childhood,mostly Cheyenne?s and a Iroquois or two.Finally settled into a 1969 Cheyenne that we did a lot of fishing on Long Island sound.With the addition of kids,boat started to get small and he didn?t want to come on trips anymore due to space,so I bought a Grady overnighter to get us back together on the boat.Kids are older now so I just sold the Grady and decided to restore the thunderbird to make the circle complete.
Before purchasing Grady,got him a brand new mercury 90 hp for the boat that only has 15 hours of use.
Cleaned the carbs and it works great.The hull is going to need new stringers,transom and floors.A lot of work on my part and most certainly not going to recover any value back when it?s done.Dad was a Air Force veteran of the Korean War and passed only two years ago.Its his floating legacy that my kids want to continue.I am struggling at the notion of doing all that work,mostly on my own,I?m 62.Hard to cut it up and send it to the landfill as well.Weighing the options.Dave
