I recently purchased a 2004 Formula 27PC, the owner took the air conditioner out of the boat. All of the connections, ducts, and thermostat are still there and usable. How difficult is it to just put a new AC unit in place and can you give some suggestions on where to find a good after-market unit?

No, they are not. Screw the unit down, attach the ductwork and attach the supply and return water lines on the condenser. Plumb your drain pan drain to the sump. Connect your thermostat and electrical wiring, open the seacock and bleed the air out of the system.
